Finally..........................


I found a madeleine tin in Dublin!!!! Kitchen Complements you are my saviour!!!!

I was in there to get some almond extract determined not to look at anything else other than that and as I was leaving after successfully avoiding all other tins, edible lustres and silicone rolling pins I happened to spy a madeleine tin out the corner of my eye!!! I was in shock as I been searching for a madeleine tin in vain for ages and was even trying to coerce my mother and sister into getting me one in New York next month (they weren't being coerced too easily though). But lo and behold there is was, as if a light was shining from on high and with that it was purchased (along with the almond extract and a palette nife but we won't talk about those)

So here it is, Saturday afternoon, the sun is shining, I'm after making the Daring Bakers cake again to bring to a friends house tonight (she's pregnant and I wouldn't like to say no as she might beat me or worse......................hi Sinead), the football is on the tv (go on the Pool) and I'm flicking through my Domestic Goddess book when suddenly I spy Nigella's rosebud madeleine recipe. So off I totter downstairs to make these with shouts from the husbag ringing in my ears at the ref, Arsenal players and whoever else should slight the godlike Liverpool players.

This recipe is so easy, these madeleines are so light and I would have eaten all 12 if I had no conscience, but unfortunately I do and it told me to only eat 3 (or 4), the rest are downstairs on a spotty plate calling me "Rachel, eat us, please, we're so pretty and light with hardly any calories!!!" The little feckers!!! Tee hee



So anyway here's what you need, if you can find a madeleine tin that is! I didn't make rosebud madeleines as rose isn't to everyone's taste so I made lemon madeleines with lemon zest and extract for extra lemony goodness!!!

50g butter
1 large egg
40g caster sugar
pinch of salt
45g plain flour
1 tsp lemon zest
1/4 tsp lemon extract
icing sugar for dusting

Preheat the oven to 220/Gas 7.
Melt the butter over a low heat and allow to cool. Put a tbsp of melted butter aside to grease your tin.
In an electric mixer beat the egg, sugar and salt together until thickened like mayonaise.
Sift the flour into the mix and fold in with a wooden spoon.
Add the lemon zest and extract and mix in.
Add the melted butter and mix in well.
Grease your tin with the melted butter you set aside at the beginning.
Spoon roughly a teaspoon of the mixture into each madeleine shape.
Bake for 5 mins but check after 3.
Sprinkle with icing sugar if you wish and eat them all!!!!

I know the feeling - I went into a local kitchen shop at home to buy a new mortar and pestle and came out with: a new jug; squeezy sauce bottles; a baguette pan, oh and the mortar and pestle!!

I have to confess though I bought a madeleine pan in New York last summer and haven't used it yet - I think these pics will stir me into action though they loook yum.

That is sure a quick and easy recipe. They look like they would melt in your mouth :)

I think I am a bit thinner due to your CD's. The first one in particular has a lot of upbeat songs on it and is excellent to listen to while working out.

I tried the black tea for the first time yesterday and it is STRONG! Very potent tea :) Much stronger then the chai. It's good, and is great as an afternoon pick-me-up. Thanks again!

I have also tried and tried to find a madeleine tin...I am enjoying the hunt in every cook shop I can find though.

i have a conscience as well, but my tastebuds are even stronger and they usually win those battles. i probably need to work on that. :)

You are a mind reader :-) I was thinking about making madeleines as I had a gorgeous lemon one at the weekend when I visited Betty's Tearooms. Now I have a delicious recipe to follow (and I know where to get the tin!) :-) It's on my 'to do' list for the weekend...

They look really beautiful...I remember when I found my madeline tin, it was a very exciting day :) I used Nigella's recipe from How To Eat which has honey in it - so delicious!

Yippee! Once you make them they are downright addictive!! I have a whole book filled with nothing but madeleines recipes, sweet and savory. Let me know if you want, I can photocopy some and send them your way!

They look lovely. That recipe from HTBADG is so very good - often I make them into other shapes too. I resisted for so long before buying a silicone madeleine tin, but I'm so glad I did, very pretty they are.

I'm mad for madeleines! I absolutely could eat the whole tin myself. If you bake them after the kids are at school and the husband is at work, who would ever know? Not that I'VE ever done that. I'm just sayin'.....

Hi Rachel,
I understand the frustration of a quest for a madeleine tin, after months of searching limerick and online, I finally ordered one off the KC website.. then wandered into TK Maxx out in the Childers Road area and found stacks of them. Perhaps they were a limited edition item though so i can't guarantee they'll still be there. I'm hoping to make it into the Market and a few other hidden treasure locations this weekend, will let you know if I come across any other gems. I'm on the lookout for one of those 'Perfect Brownies' tins. I think they're a US only item though.. Ah well. :)
